Bob’s Almond Flour with Pecans & Chocolate Cookies

( Gluten & Sugar FREE)

Recipe

Ingredients 

  • Kerrygold butter ( 4 oz) at room temperature

  • ½ cup Allulose or Monk fruit sweetener ( natural sugar substitute) 

  • 1 egg

  • 2 teaspoons vanilla extract

  • 2 cups almond flour

  • ¼ cup tapioca flour

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 1 cup chopped pecan

  • 1 bar ( 2.8 oz) Lily’s Extra Dark Chocolate Bar broken up to pieces

Instructions 

  1. Beat the butter and Allulose in a stand mixer. Add the egg and vanilla.

  2. In a separate bowl, stir together the dry ingredients of almond flour, tapioca flour, baking powder, and salt

  3. Add the dry ingredients to the wet mixture in the stand mixer. Blend until just combined.

  4. Make balls of dough with one tablespoon scoops. 

  5. Place on a parchment-lined baking sheet

  6. Bake at 325 degrees for 11 to 13 min. 

This recipe gives you 2 dozen delicious, nutritious gluten-free and sugar-free cookies with about 150 calories each. ENJOY!!
